- 1 recipe Easy Shortbread CrustÂ
- 2 (8-ounce) packages cream cheese, softened
- ½ cup powdered erythritol-based sweetener
- 1 teaspoon grated lemon zest
- ¼ cup heavy whipping cream, room temperature
BLUEBERRY TOPPING:
- 1 cup frozen blueberries
- ¼ cup water
- ¼ cup powdered erythritol-based sweetener
- 1 tablespoon fresh lemon juice
- ¼ teaspoon xanthan gum
- Fresh mint, for garnish (optional)
SWEETENER OPTIONS:
Go ahead and use any sweetener you like, except for granulated bulk sweeteners. Because these bars are not baked, a granulated sweetener would be too gritty.
